I have to admit. I love carbs. I love pastries, breads, pastas, you name it. Growing up, my mom always made banana nut bread with our overripe bananas. After college, marriage, and a child, I had forgotten about the recipe. One day, my son went to spend time at my mom's house. She happened to be preparing for my Papa (her dad) to visit. He loves her banana bread, so obviously, she had to make him a couple of loaves for his time in Michigan. The delightful, nutty, sweet aroma definitely intrigued my then two-year-old son. He ended up devouring close to a quarter of one of the loaves she had made! Since then, we have made banana bread every month. As I drink my afternoon coffee, my son and I enjoy a slice together. It's almost become a ritual for the two of us, and I have to say, there are no complaints here! I've tweaked the recipe a bit to suit my preferences. This recipe produces a moist bread with crunchy, caramelized coating. See the tip at the bottom of the recipe for a sugary topping to add should you desire that.
